Paleo Copycat Chick-fil-A Chicken Nuggets

Today I have another version of the paleo chicken tenders. My daughter is in love with Chick-fil-A so we have been doing our best to recreate the magic at home paleo- style.

My husband was totally weirded out by the idea of the pickle juice but it was great! It didn’t taste anything like pickles, it just made for juicy tender nugget. Try it out!

Ingredients:
1.5 pounds of chicken cut into cubes
2/3 cup coconut flour
1/2 tsp salt
1/2 tsy everyday seasoning

Marinate chicken in pickle juice for 30 minutes, up to overnight. Drain pickle juice and pat chicken dry with a paper towel. Place coconut flour and spices in a large ziploc, add chicken and shake. Fry chicken in coconut oil or other compliant oil. Flip after 4 minutes and cook for another 4 minutes on other side or until chicken is no longer pink. Be sure not to overcrowd the chicken.
Serve with your favorite dipping sauce!
