Quick and Delicious Vegan Queso

Guys. This queso is amazing. We have been dairy free for awhile and I probably miss cheese most of all. I was so excited to find a queso replacement!

This recipe is cashew based and gets it cheesy flavor from nutritional yeast which is packed with B vitamins. A little turmeric for color, salt, lemon juice and optional salsa for flavor and this queso is done!

Vegan Queso Recipe ↓
♦ 1 cup raw cashews soaked for 4 hours and drained
♦ 1/4 cup water
♦ 1 teaspoon salt
♦ juice of half a lemon (about 1.5 tablespoons)
♦ 3 Tablespoons nutritional yeast
♦ 1/8 teaspoon turmeric
♦ 1 cup salsa (optional)

After cashews have been soaked and drained combine all ingredients except salsa in a high powered blender and blend on high until smooth. Add salsa and pulse until it reaches your desired consistency. Heat on low or in crockpot and serve.

Disclaimer: I have only made this queso in my Blendtec which is a high powered blender and can pulverize anything. I’m not sure how long it would take in a regular blender but I know my mother in law has successfully made this in her blender. Let me know if it works for you!
